Think this needs to be discussed on dev@
We can build with 21, but we should compile for a lower JDK level, i.e. 17,
imho. Temurin will provide JDK 17 Support until 2029 (as other vendors do) for
exsmple.
Some of our consumers already struggled with the move to 17 in OpenNLP.
