If you don't want to use Java, you can connect to databases using drivers, like ODBC, that don't require Java. About Java in WIndows 7, note that in Windows 64 bit, OpenOffice is 32 bit application, this means you have to install a JRE 32 bits, too. Second, the JRE 7 has a bug on Windows: it doesn't install the required VisualStudio redistribuable. Simply follow the advice in http://www.openoffice.org/development/releases/3.4.1.html#AOO3.4.1ReleaseNotes-KnownIssues "Apache OpenOffice 3.4.0 and 3.4.1 support Java 7, which is the recommended configuration; but (especially on 64-bit Windows) you might receive warnings about the Java version being defective. In that case, download and install the Microsoft Visual C++ 2010 Redistributable Package.
