The problem is much larger than I thought - it's *any* OpenOffice Calc file - on OS X 10.6.8 - when opening OpenOffice Calc no text is visible in the spreadsheet at all. You can enter text in the cells, and that text is stored, but it appears only when the cursor is on the cell. Not only that - but the text is only visible in the "input line" - and not in the cell itself.
