The Handout View does not show the resulting handout but only the document template for the handout. In this template there is the field <footer>, which will have the correct text, when the handout is actually printed. The same applies to the other fields there. There have been already some complains, that the Handout View does not show the real content and does not have a preview, but only the document template.
