I used the following steps to successfully change default language settings: 1. Launch OpenOffice and choose Text Document 2. Select Preferences from the OpenOffice menu. 3. Expand Language Settings and choose Languages. 4. Choose English (USA) from the list of Western default languages for documents. 5. Click OK. To confirm the changes persisted: 6. Quit OpenOffice and re-launch. 7. Choose Text Document. 8. Open the Language Preferences dialog box (see steps 1 and 2) to confirm the new language setting was preserved. 9. Additionally, confirm that spell check appropriately redlines words that are spelled differently in the UK as compared to USA (color/colour, neighbor/neighbour, rumor/rumour, honor/honour, flavor/flavour). See DefaultEnglishUSA.png and DefaultEnglishUK.png attachments In my follow-up tests, the new default language setting persisted after exiting and relaunching OpenOffice.
