You can write into the table cells whatever you want. The icons in the lower part correspond to "Fields" in Writer. You get all of them in the Field-Dialog (Ctrl+F2), some of them are directly in menu Insert in addition. If you only have text in the center area without the left and right area as in your screenshot, you can set a left and right margin for the header in the paragraph style, or you set before and after indent in the paragraph style of the header.
