I could reproduce the bug with this couple of configurations:

Ubuntu 18.04.1 LTS (Bionic Beaver)

    RAM 8 GB

    CPU 2 cores, AMD A6-4400M APU,  2.60 GHz

I followed these steps to reproduce the bug with both configurations:

        Go to the menĂº: Tools > Options > Colours

        In the component that has the color matrix, select the last color,
which is the one on the bottom right.

        Look at the drop-down list of colors, now you should see in this
component the name of the color selected in the previous step.

        Click on the "Delete..." button.

        Confirm that you want to delete the colour.

        Look at the component that has the colours matrix, and check that the
color has actually been erased.

    Look at the drop-down list of colors, it still shows the name of the color
that was removed, but the deleted colour should not been shown at the drop-down
list, because it does not exist now, it was deleted.



Just after causing the failure, I did these follow-up steps:

        Put the mouse ove the last color, which is the one on the bottom right,
in the component that has the colours matrix.

        Now take a look to the field "Name" which is showing the name of the
deleted colour too 



So, in the end, I discovered that here were a couple of failures:

        First, the one descrived in the original bug report, related to the
drop-down list of colours.
        Second, the failure in the field "Name", that is showing the deleted
colour's name too.

This couple of bugs should be fixed because users loose trust on the software
when they saw this kind of failures, and they should think that features
related with colours are wrong in Writer, so they could find other word
processor's options and and they will stop using the application.
