Summary: Update k3s version

We're using an ancient k8s version: 1.21.2. The latest is 1.34.2
[https://github.com/apache/ozone/blob/e2718dda4a56e516853dfec32fe56758ec1cad3f/hadoop-ozone/dev-support/checks/install/k3s.sh#L20]
We should update k3s version, and make sure all k8s doc and scripts work with
the latest kubernetes 1.34.2. We should also state in the doc the version of
kubernetes tests with.
