The ozone-iceberg module depends on Iceberg API/core, Parquet, ORC, Avro, and
their transitive dependencies. Shipping those as many separate JARs under
share/ozone/lib would require listing all of them on the classpath for
RewriteTablePath when the CLI is added.
A fat jar collapses that Iceberg stack into one artifact.
So, one fat jar is simpler than dozens of loose Iceberg/Parquet/ORC jars for
running this tool.
