This lets `UpdateColumnType` commit any replacement type without checking
whether existing data files can be read as the new type. Existing files keep
the old schema, and `DataFileReader` later tries to cast old Arrow columns to
the new target type; unsupported changes can therefore succeed at ALTER TABLE
time and fail when users read existing rows. Java `SchemaManager` rejects
unsupported casts before committing, so this should either validate supported
type evolution here or reject unsupported changes.
