   ### Purpose
   
   `FileType.isMutable` decides which files `CachingFileIO` (the 
`local-cache.*` block cache) never caches: a file rewritten under a stable path 
would keep being served with its old content. A few such files were missing:
   
   - Temp files from `Path.createTempPath()` (`.{name}.{uuid}.tmp`) were judged 
by the unwrapped name, so a temp manifest or snapshot counted as immutable. 
They are now always mutable: they are renamed away once written and never read 
back under their own path.
   - The Iceberg-compatible `version-hint.text` and `retire-pending` are 
rewritten in place by `IcebergCommitCallback`, so they are now mutable.
   - Manifest sidecars (`*.avro.sidecar`) classify as `META` even when the name 
does not contain `manifest`: the name comes from `ManifestFileMeta#extraFiles`, 
and explicit rewrites may use any name.
   - `local-cache.whitelist` accepts `*` for all file types.
   
   ### Tests
   
   `FileTypeTest`: 7 new cases (temp files, Iceberg metadata, `_SUCCESS` under 
tags, changelog metadata, manifest sidecars, whitelist parsing with `*`); 18 
passed.
