### Purpose
Setting `postpone.merge-on-read = true` as a table option currently causes
`FlinkSourceBuilder` to reject unbounded sources. Apply postpone merge-on-read
only when `sourceBounded` is true so streaming reads can use the same table
configuration and continue through the normal source path.
Update the regression test to assert that an unbounded source is built
successfully with `CONTINUOUS_UNBOUNDED` boundedness.
### Tests
The updated regression test reproduced the original exception before the
fix. All 20 selected tests passed after the fix, including the complete
`FlinkSourceBuilderTest` class, bounded merge-on-read parallelism inference,
and batch merge-on-read integration coverage. Standard build checks were
enabled.
