FYI I think the problem is not in Quarkus but in Polaris: we explicitly define `quarkus.http.cors.methods` here: https://github.com/apache/polaris/blob/d14ee7b7a2f3902f1e891a4fdab28d0c6b3afe00/runtime/defaults/src/main/resources/application.properties#L61 -- This is an automated message from the Apache Git Service.
