Expand testing matrix to support Tomcat 6.0.x as well

Now that Tomcat 6.0 has started doing releases, we should start testing against
it as well as 5.5. However, there are likely to be some teething issues (such
as <http://issues.apache.org/bugzilla/show_bug.cgi?id=40962>) before we can
require this testing to pass before a Shale release.
