Since {{eo.b}} is an array of sttructs, don't you need to choose an index 
before accessing field {{{}e{}}}?

For example:
{noformat}
df = (
    spark.createDataFrame([value], schema=t)
    .select(F.explode("o").alias("eo"))
    .select(F.element_at("eo.b", 1).alias("eob")).select("eob.e")
)

df.show()
{noformat}
This displays:
{noformat}
>>> df.show()
+-------+
|      e|
+-------+
|string2|
|string5|
+-------+

>>> 
{noformat}
