Replaces #9110 and #9131. Iceberg 1.12 removes `GenericAppenderFactory`, which broke compilation of storm-iceberg. - `IcebergWriter` now builds its task writers on `GenericFileWriterFactory` (built from the table, using the current schema and the configured file format). - `CountingAppenderFactory` becomes `CountingFileWriterFactory`: it wraps a `FileWriterFactory` and still tracks the data writers it hands out, so `bufferedBytes()` keeps working for size-based flushing. - `PartitionedRecordWriter` takes a `FileWriterFactory`. All 68 storm-iceberg tests pass locally, including `IcebergWriterTest.bufferedBytesGrowWithWritesAndResetOnComplete`. -- This is an automated message from the Apache Git Service.
