[~wilfreds] I think, we should target kind v0.31.0 rather than v0.30.0 as the
e2e tests in CI now include Kubernetes v1.35

and as per the kind documentation v0.30.0 only supports up to K8s v1.34, v1.35
require kind v0.31.0. kind v0.31.0 is also the latest stable version.
