The one reason why you might want to encrypt the IMAP mirror is if you
are worried about data at rest --- i.e., someone steals your laptop
from your hotel room while it is powered off.
But there are other solutions for that use case --- dm-crypt, for
example, comes to mind, since there is probably a lot more that
someone could get from stealing your hard drive than just your e-mail...
