Good catch. I had messed up a couple of months ago by unintentionally disabling 
All Mail folder over IMAP in GMail settings.

you can try making sense of mbsync's -Dn output and/or try browsing the mailbox 
interactively with thunderbird or some such and look for anything unexpected.

And that helped figure I had poorly interpreted the Patterns instruction in the config. 
Indeed my gmail-all channel wasn't doing much according to the logs. Rereading the 
manual, it seems Patterns is prefixed by the store's mailbox. Therefore if the store in a 
channel already targets a very specific mailbox, you can go ahead with Patterns 
"*" (and not Patterns [mailbox] as found in my config; otherwise with my new 
understanding, it will attempt to match mailbox/mailbox which is likely to no op).
