Are you sure you are getting an extra row?
Maybe you see the borders of the Cells (include row borders)
and the border of the complete table (can look like a row border).
The Cell-border and Table-border at a split don't overlap.

As for your endHeaders question: I wasn't aware of the fact
that the Table adds header-cells twice when the Table doesn't
fit on a page. I don't have the time rightnow, but maybe I'll
take a look at in during my holidays (next week).
