I'm not using Document.add(). I'm using ColumnText which has a
PdfContentByte but what PdfContentByte method do I use and how?

noWrap means that the text keeps going and going and going... There's no
truncation.
What you want to do is easy to do in PdfContentByte but quite impossible
with something that uses Document.add().
