I prefer the WYSIWYG approach to prepare templates, instead of writing XSL that template designers find very difficult to learn and use. There is no WYSIWYG editor for XSL Formatting Objects AFAIK (at least not an open source one).

I have a template solution that produces plain text and HTML, and now PDF, starting from a simple text template. I will be releasing it soon as open source (must iron out a couple PDF problems first).

Does iText support XSL Formatting Objects?

No, I agreed not to compete with FOP long ago.
