There are many variations for fonts, see the tutorial. For western languages
anything will do (well, almost anything). For Japanese see
http://www.lowagie.com/iText/tutorial/ch09.html#CJK. You can also embed
Japanese fonts, see the example ms_pgothic.java at
www.geocities.com/itextpdf.
