It is mostly likely that the image was written by Adobe
PhotoShop. PhotoShop invert all the CMYK colors in JPEG format. However,
Illustrator was trying to render the image as it is.

Nothing is wrong. Just a trick from Adobe. iText inteprets the JPEG
correctly and does not touch color components in the image. We just do as
what it should.
