What tools are being used to create the source material? Will the authors/creators also have Adobe Acrobat (full product) at their disposal?

Are the PDFs to be used for screen viewing or high quality printing (or potentially both)??

Are there any expectations about font or graphic usage?

What classes should I be looking at in itext to accomplish this?

PdfReader & PdfStamper - since you'll be reading in existing documents and then stamping on new information.

You DO NOT modify existing content in a PDF (it's not a format you can "search & replace" stuff in).

Additionally, if there is no easy PDF-standard way to mark a region modifiable, can anyone suggest a way to put some sort of "marker" into the page that could be found by walking through the objects after loading
the PDF?

The easiest way to do this would be to use Acrobat form fields. Anything else would require more complex authoring tools and/or PDF parsing.
