For bilevel images JBIG2 is the best but is not supported by iText. iText uses the 
CCITT G4 compression that is not that bad. For RGB pictures JPEG2000 is the best but 
is not supported by iText, plain jpeg is the alternative.
For RGB technical images use PNG that is supported by iText.
iText will compress RGB TIFF with a PNG-like filter. Bilevel images are compressed 
with G4.
