This was explained many times before but here we go again.

Look at the dates and use the more recent one.

itext-paulo is considered "early access" so, you can consider the other

No. The development is parallel, although it doesn't overlap. Sometimes
Bruno will put the latest itext-paulo version in the CVS but it's at his
discretion.
