That's what my original question was getting at ... By 'document' I
meant in terms of iText. My question is 'how can I change the iText
layout engine's default font'? Sorry for the confusion. Thanks!

         No, there is NO DEFAULT!

         IF you don't get a font - then Acrobat will error.


         HOWEVER, iText's layout engine defaults to Helvetica - and you
can 
change that.
