If you don't have formfields, you need to know the exact coordinates where you want the new content to appear. Once you know these coordinates, you again need PdfStamper and use methods such as PdfStamper.getOverContent() and PdfContentByte.showTextAligned(), etc...

If you don't know the coordinates where to add the new content, you need to go back to the drawing board and consider alternative solutions.
