Experience has learnt that it is very hard to design a generic solution that transforms every possible custom XML into PDF. I also don't want to reinvent FOP that uses an XSL:FO transformation. Instead I write a custom DocumentHandler for the different XML schema's that are defined in my projects. This includes table functionality. I can't show you an example as the projects I am working on are closed source, I can only say I find it easier to code a DocumentHandler than to write an XSL (but that's maybe more a matter of taste and experience, than an actual fact).
