Interresting. So I build the Report with, let's say, Sun Solaris, which doesn't have Windings.

As a matter of fact, the OS at Ghent University where I use iText in a production environment is Solaris and yes, you can embed fonts in PDF files BUT: you do have to tell iText where to find the font. In my answer I used Wingdings as an example because it has the checkboxes, but you can use any other ttf, ttc or otf that has the character. You can even create your own Type 3 font, but that's more advanced stuff.
