You might consider a strategy that doesn't (necessarily) involve iText. Consider the following elements:
* Your form "submit" button does a "submitForm()" call, which sends the FDF file to a servlet that emails the FDF to a destination address (perhaps determined by a hidden form field. * The javscript code around the "submitForm()" call sets a "state" hidden form field and sets fields to read-only (or read-write) appropriately. * The "PageOpen()" javascript method checks the "state" field and does initialization work, perhaps changing read-only or read-write states.
