IText can be used to do just about anything. Just last week I used IText to rebore the pistons on a old car I have been working on. Unfortunately, I had to write the code myself ;-). Seriously, you can use iText to get certain info from a pdf (and if iText doesn't then you might look at pdfbox) but as you will often hear here... pdf is a "final" document format (mainly for print/visual consultation). So extracting "all" info from a pdf is NEVER going to be easy. It might not be hard but that depends on the pdfs...
