Checkout ghostscript, what you could do is use it to transform the filled out pdf that you've generated with iText to a PNG or other type of image and import it into a new blank pdf document. I've seen it reduce the size of documents by more then 50% without visible loss of quality.

I have generated a document with acrobat designer. This document have a lot
of fields which i want to fill with itext. Well, this is already done. My
problem is that the file size is 500 kbytes and it is too big. I have tried
to solve it but without success. The only way to reduce this size that i
have found is to print the document with any pdf printer such as "jaws pdf
creator". This reduce the size to 40 kbytes thats way i think there must be
any solution in itext but i am no able to find it. The only thing i have
found is "setFormFlattening(true)" but it does not work, so, anybody knows
how to reduce it?
