Only if you have a Persian font file. If you haven't, take a look at:

Arabian is supported in classes PdfPTable, (Multi)ColumnText and
PdfContentByte.
This means that iText can write the text from right to left and make
ligatures.
Another way would be to use PdfGraphics2D (but I wouldn't recommend it
because you will probably have some troubles with the font metrics).
I haven't written any application that produces Persian text yet and I don't
understand Farsi, so I would like to ask you in advance not to mail me for
any examples.
