Well basically I have an image that has a scale bar of 2.91 but when it is 
inserted into the pdf document it is being displayed as 3.4cm, if the pdf does 
not have a dpi then where has this default of 72dpi arisen from?

         You mean you are putting different images INTO the PDF document?

         Or you are talking about what Acrobat (or whatever PDF
viewer) is doing when it displays the created PDF on the user's computer?

         A PDF document DOES NOT HAVE a dpi!   It is a 
resolution-independent collection of objects.
