In general, you cannot modify existing content in a PDF. If you can gain
access to the original file (word doc, web page, whatever), I STRONGLY
recommend that you alter that file and rebuild the PDF.
You CAN overwrite original content, but that requires knowing ahead of time
where it will be... if you're modifying the same PDF in different ways, this
can be relatively easy:
Draw a white box over a given set of coordinates to cover the original
content
Draw whatever it is you need to draw... text, tables, whatever
But the original content is still there, you just can't see it. Screen readers
will still pick up the original text, and it can still be selected and copied
to the clipboard.
As soon as what you're covering moves, or you need to reflow text, or change
where one page ends and the next starts, dropping new content over the old runs
into serious problems.
PDF is designed first and foremost as a display format. Editing an existing
PDF is almost always restricted to stamping new content over the old... and
iText cannot handle those rare exceptions. Even PDF files that were generated
by iText suffer from this 'limitation'.
