Use one the setFieldProperty methods as described in the API docs:

Each field has one or more widget annotations.
These widget annotations are PDF dictionaries
with references to appearances.
You can use iText to replace/change these appearances.
Unfortunately I don't have a ready-to-use example
for the moment.
