I want remove a stamp composed by text and graphic (rectange) drawing on the
overcontent with itext. The orignal pdf is composed with one tiff image on
each pages.

I can change the method of making the stamp if they are other method more
easy to remove it.

If you're talking about any PDF existing in the wild,
this is a very difficult requirement.

If you have added the stamp with iText, you could
use the low-level methods (see chapter 18) to read
the XObject and replace it.
If the stamp is an image, you could read the FAQ
entry about replacing images.
If the stamp is a 'stamp annotation', it might be easier.
But you didn't specify, so your question is hard to answer.
