That's not true of course: you can change the text state
at any time using setFont(BaseFont bf, int size);

How did you add the Chunk? Did you have a look at the
ColumnText object? This object, discussed in the tutorial,
and in chapter 7 of the book, allows you to add basic
building blocks (such as Chunk, Phrase, Paragraph,...)
at an absolute position.
