I will try using an external signature dictionary to insert the timestamp. Regarding Show Certificate in Adobe, if I do not call setCertify(true), I can see the entire certificate chain when clicking "Show Certificate," so it's not the certificate. I noticed someone else on the mailing list had the same problem with PdfSignatureAppearance.setCertify(boolean).
