Only if you rephrase your question using the correct terminology.

When you talk about 'dynamic fields', I think of 'dynamic forms'
and XFA, and then the answer is: no, you can only do this with
Adobe LiveCycle.

But you're saying you are using iText to generate a PDF form.
This means you aren't talking about XFA, but about an AcroForm.
The fields in an AcroForm aren't dynamic. They have fixed
coordinates.

You can use iText to replace these fields with fields that
have other coordinates, you can add extra fields, you can
rebuild the form from scratch; but you can't expect AcroForms
to have the same 'dynamic' behavior of an XFA form.
