Only if you rephrase your question using the correct terminology. When you talk about 'dynamic fields', I think of 'dynamic forms' and XFA, and then the answer is: no, you can only do this with Adobe LiveCycle. But you're saying you are using iText to generate a PDF form. This means you aren't talking about XFA, but about an AcroForm. The fields in an AcroForm aren't dynamic. They have fixed coordinates.
