It can't, and as far as I know it doesn't. iText is a Java-PDF library. I just visited subtext and I read: "Subtext is an open source project licensed under the BSD license. It is a fork of the popular .TEXT blogging platform." .TEXT (or dotText if you prefer) is a completely different product than iText.
