Aha, but that's fairly simple to achieve. Originally Adobe defined different layers for the signature appearance. AFAIK not all these layers are still in use, but the text you are talking about goes in the second layer. You should consider the English text to be a default. In your own applications, you can choose to put some other text. Look for the method setLayer2Text and setLayer2Font.
