I answered a question similar to this a while ago (see http://article.gmane.org/gmane.comp.java.lib.itext.general/34453 for more information). The biggest issue you may have though is that you may have to create the xfa:data area yourself. That involves reverse engineering the template section of the XDP form. Once you have an xfa:data area then you can set the not values as needed and import the XDP data back into the PDF.
