Yes, a second edition would mean a lot of extra work for me ;-)
Still: I have plenty of ideas for another book on PDF.
It wouldn't really be a second edition, but a book that looks
at PDF and iText from another angle.

My observation is that new editions are usually needed for the publisher to get a "bump" in sales, while a second printing is done to satisfy demand for the book. In either case, it is indeed remarkable that another print run is forthcoming.

The 1st edition, 1st printing, is about to achieve "collector's item" status. Mine is already a collectible, as it is priceless to me.
