Indeed it' confusing!
iText supports composite mode and vertical alignment in Cell.
Not vertical alignment in Paragraphs! I assume that I should
use composite modes only for simplistic ways, and handles
at Table cell design level.

I think you can improve composite cell layout to have both 
alignment options, and employ precedence in laying them 
in cells.
