I haven't received your personal message yet (unless it dates from way back), but the license is about the source code, not about the way you jar the class files. I assume your question is about ScaleAndTile, an application that USES iText, providing a SURPLUS for people buying your software (which I promoted on my blog a while ago). ScaleAndTile may be inspired by some functionality in the toolbox. I don't know; but you mention the Toolbox, so I'll also add this: the license of the toolbox was changed to the MIT license a while ago, and this license is less strict than the MPL and/or LGPL: it gives you more freedom. In other words: there is no problem with ScaleAndTile, even if you would jar it together with iText class files.
