That's what happens if you use a multiline field as you
described yourself: textField.setOptions(TextField.MULTILINE);
The following classroom example shows different options:
http://www.1t3xt.info/examples/browse/?page=example&id=331
http://www.1t3xt.info/examples/results/classroom/filmfestival/movies22.pdf
Where it says "TYPE," the font size is adapted to the content.
Where it says "N° 0000000", the font size is fixed and text
that doesn't fit, disapears.
Where it says "Name", the text is distributed over different
lines.

This form is filled programmatically in this example:
http://www.1t3xt.info/examples/browse/?page=example&id=332
It shows the desired behavior.

You can test it using your own values here:
http://itext.ugent.be/articles/filmfestival/index.php?page=3
Fill in a name that takes more than one line, and it will
be split automatically too.

That's what happens with the "N° 0000000" field in the example;
but not with the "Name" field.

In that case, don't flatten the form.

Isn't that the default? At least that's what I see when
I experiment with the online example entering longer and
shorter sentences for the "Name."
