The Acrobat UI calls them Portfolios in Acrobat 9 - in Acrobat 8, they are called Packages. In the PDF language, they are Portable Collections.
The big difference is that a Portfolio has a Flash UI on top of it. iText supports Packages but (not yet?) Portfolios.
